Healthy Pancake---Quick Breakfast Option

Oats, Egg, Banana, Almonds, Honey---Sounds like a healthy breakfast?...Yes it is!!! It tastes great too....

You can have it as evening snack too...It was rainy in Los Angeles for the past two days and hot pancakes made my rainy day...:-)

If you are a vegetarian and you prefer not to add eggs you can replace it with little bit of coconut powder.

Ingredients:
  1. 1/2 cup Oats
  2. 1 whole egg and 1 egg white (I got this habit of throwing the yellow out from my second egg onwards...I feel one egg yellow is more than enough for the day...)
  3. 3/4th of a long Banana
  4. 5 to 8 almonds
  5. 2 tbsp of milk (low fat or almond milk)
  6. Little honey
  7. 1 tsp of butter
Step 1:
Powder the oats.
Powder the almonds.
Smash the Banana.
Whisk the eggs in a bowl.

Step 2:
Add the smashed banana, powdered oats, almonds and whisked eggs together.
Add little bit of honey. (Remember banana is already added. Add honey per taste that balances the sweetness. I prefer light sweet pan cakes)

Step 3:
Now to loosen the batter add the 2 tbsp of milk. (Ensure the batter is not watery. It should settle on the pan when poured.)

Step 4:
Heat the pan. Add little butter. And pour the batter in the desired shapes.

Quick and healthy. All you need is the availability of ingredients.....
