Quinoa stuffed bell-pepper


Quinoa cooked in spices & stuffed in Bell Pepper

Ingredients:

Quinoa & Veggies:
Quinoa - 1/2 cup (quinoa can be replaced with brown rice or cracked wheat)
Bell peppers -2
Green chili -2
Onion - 1/2
Tomato - 1 medium
Vegetables of your choice - Green beans, carrots & corn

Spices:
Cloves. Cinnamon, Bay leaf
Coriander powder 1/2 tsp
Chili powder - 1/2 tsp
Turmeric powder 1/4 tsp


                   
Steps:

Step 1 - Roast bell-pepper: Toast the bell peppers in 1/2 tsp coconut oil until tender in all sides            

Step2: prepare stuffing: 
Heat a pan. Add 1/2 tsp coconut oil.
Saute cloves, cinnamon & bay leaf.
Add chopped onions, slit green chilies and saute further until onion are slightly brown
Add chopped tomato & saute.
Once the tomato is smashed, add all the veggies & Quinoa
Add Coriander powder, Chili powder and turmeric powder and mix well.
Add water (1 cup quinoa :1 & half cup water).
Cook until the water is absorbed completely and the ingredients are cooked.



Step 3: Stuff the prepared quinoa with spices & veggies in the toasted bell pepper.
