Young coconut flesh recipe (Elaneer vazhukkai milagupirattal)

Young coconut flesh recipe -  Elaneer Vazhukkai/Vazhuval Milagupirattal is an authentic Indian recipe.

The flesh of young coconut is high in calcium and less in fat comparing with matured coconut flesh and is know for its anti-aging properties.

Its tasty to eat raw and tastier to eat when cooked with aromatic Indian spices and ingredients...

Here is an awesome authentic Indian recipe using Young coconut meat...

                 

Ingredients:
Young coconut flesh (from 2 young coconuts.)
Shallots/Small onions - 5 to 6
Red chili - 2no.
Black pepper powdered - 1/2tsp
Curry leaves
Olive oil, Mustard and Urud dhal  - little to splutter



Steps:

  1. Heat a pan. Add 1 tsp of olive oil.
  2. Once the oil is heated splutter musturd and urud dhal.
  3. Add Curry leaves and red chilies.
  4. Once curry leaves and red chilies are slightly roasted add chopped small onions.
  5. Let the onion get cooked.
  6. Now add the flesh of young coconut.
  7. add little salt and the black pepper powder.
  8. Mix well and let the mixture it on low flame for few minutes.
  9. Check if the young coconut has absorbed the salt, pepper and the curry leaves flavor...If yes...Its ready to serve..

Serve hot in banana leaf and enjoy as a snack or a side dish for lunch!
