A recipe using orange peel/skin

This sounds weird...isn't it??...But u r going to love this recipe for two reasons.

  2. For its taste....:-) It tastes so yummy that it even satisfies my sweet craving....
Benefits of orange peel(reference Livestrong.com):

Just 1 tbsp. of orange rind contains 0.6 g of fiber, 14 percent of your daily value of vitamin C and 1 percent each of vitamin A, calcium and folic acid. It has only 6 calories and no fat, cholesterol, sugar or sodium.


Storage:
Just prepare a quantity that lasts for a week and store in a glass container and refrigerate. Use it when you need.

We cannot eat a bowlful at a time. Eat it a spoonful, in a snack time or as a side dish for Dhal, Sambar, rasam and curd rice. Just like a pickle...



Ingredients:
Orange Peel - 2 oranges medium sized
Green chilies - 5
Tamarind juice - extracted from tamarind of size like 1 small lemon.
Olive oil - 2ts
Mustard 
Salt as required
Jaggery (little not much)

[**Jaggery  is a traditional uncentrifuged sugar consumed in Asia and Africa. It is a concentrated product of date, cane juice, or palm sap without separation of the molasses and crystals.]


Steps:

Step 1: Heat the oil in a pan.
Step 2: Add mustard and let it splutter.
Step 3: Add green chilies and let it fry for few seconds.
Step 4:Add diced orange peel and fry it in simmer for few seconds. This will help remove the bitterness. (But not too much frying)
Step 5: Now add the tamarind juice. If the tamarind juice is very thick add little water & loosen up...
Step 6: Add Salt as required.
Step 7: Let it cook for few minutes. Ensure the final product is in semi-solid state as shown in pic. Add water as needed.
Step 8: Check the orange peel..you will know when its cooked...Just like Lemon..it will become soft and loses the raw taste.
Step 9: Add jaggery. Not much.Its little bit to attain the taste of a pachadi/pickle.

We are done!!!...I usually have it in the evening where I mostly crave for something sweet & spicy...
